Hot Tails

Chefs Cody and Samantha graduated from culinary school in January 2010, and just three months later, transformed a former drive-thru convenience store in New Roads into Hot Tails; a rustic, South Louisiana style restaurant. The establishment was intended to be an outlet for the crawfish being raised on their families farm, but has evolved to include a full menu of their versions of Louisiana classic dishes and elevated comfort food. Their dishes have been referred to as “Hardcore South Louisiana cuisine.”

Ma Mama's Kitchen

Our food philosophy here at Ma Mama's has always been both serious attention to freshness and an underlying responsibility to a rich heritage of Creole/Italian cuisine in New Orleans.

After marrying and relocating to Pointe Coupee Parish, those food traditions became intertwined with the Cajun flavors here, which takes us to the present.

Scott Varnedoe

Chef Scott Varnedoe’s love of the South has been the benchmark of his culinary endeavors. “Upscale Down South,” the tenet of his cooking style, is evident in the way he pairs local ingredients with French, Italian, Spanish or Asian influences.

Varnedoe has delighted customers from Natchez to Manhattan. His years in The Big Easy earned him top honors when Bon Appétit named him one of the “Top 5 Chefs in New Orleans.” His namesake restaurant at The Myrtles Plantation was named one of the “Top 5 Places to Eat” by The Wall Street Journal. His tenure in Baton Rouge saw him helming the kitchens of prominent restaurants like Stroube’s Chophouse and Juban’s Creole Restaurant. Maybe most notably, he has cooked at The James Beard Foundation four times.

Scott is now back near his home town of St. Francisville at the newly opened Iron Horse Cafe in Jackson, Louisiana, where he’s earning praise for his Italian-influenced menu, cast-iron ribeye, and brick oven pizzas. Scott is looking forward to showcasing his talents at this year’s Winemaker Dinner.
